Bean sprouts are perhaps the best known and most popular sprout. These
tender, delicate veggies are the young sprout of the dried mung bean
seed. They are alive with enzymes (living nutrients) plus a good source
of iron, thiamin (vitamin B1), C and E. Mung bean sprouts contain about
30 calories per cup, making them a perfect choice for the “weight
conscious”. Bean sprouts are best when cooked crisp and tender, not
overcooked.
They are refreshingly crisp, pure white shoots with pale yellow tip.
Traditionally used in all styles of Asian cooking from stir-fries to
steam boats, these versatile sprouts are now used in all styles of
cooking. Sprouts are ready to cook straight from the pack. They also add
great texture and flavor to salad dishes.
This rotund sprout has a clean nutty flavor. Often used in wet dishes
such as soups, they also add texture and flavor to stir fry's, omelets
and vegetable side dishes. To retain the sweet taste and texture, do not
overcook these tasty morsels.
Bean sprouts are an important source of protein,
iron, calcium, zinc, they contain vitamins A, B1, B2, & C, potassium and
are rich in complex carbohydrates and dietary fiber. Beanshoots contain
no cholesterol and have very little fat, most of which is provided by
polyunsaturated and monounsaturated fatty acids. The protein in mung is
said to be easily digested and therefore mung bean based food
preparation are especially good for children, elderly and invalids.
Selection: Good-quality bean sprouts will
be crisp-looking, almost dry and bright-white.

Avoid: Avoid product that is brown, overly wet, or that has
wilted roots. Milky-white or yellow water in the bottom of the container
is a sign of old product or poor refrigeration.
